Kumis is a dairy product obtained through fermentation of raw unpasteurized mare's milk (usually a couple of days). During the fermentation, lactobacilli bacteria acidify the milk, and yeasts turn it into a carbonated and mildly alcoholic drink. Kumis keeps for just a few days before it goes off completely and so its manufacture only takes place at those times of year when mares are actively lactating.
