Wagasi cheese

A specialty cow's milk cheese from northern Benin. It is made by the Fulani people, and is easily available in cities in Benin, such as Parakou in the middle of the country. Wagasi is a soft cheese with mild flavor with a red rind. Often used in Beninese cooking.
